Martinis
Come learn the techniques to making great martins. We will make a Key Lime, Chocolate, The Grand, Sky Blue, and Blackberry martinis. We will match these up to some awesome appetizers like tuna sears, Shrimp and Prosciutto, Sweet Fruits, and Chocolate.

Tequila Tasting
Not sure about this stuff called Tequila? Well if you are a little curious or want to learn how to appreciate this nectar of the Blue Agave, then this class is for you. We will cover the types and kinds of tequila. We will taste 1 flight of tequila selected by the chef, and the students will get to select two additional samples to taste. The chef will also prepare two of his favorite appetizers made with tequila.

Cooking with Smoke and Fire
Chef Don will cover the cooking method of smoking by smoking shrimp and scallops over cherry wood, we will barbecue a beef brisket and grill nectarines and make them into a savory wrap. Brother Tom will be serving up some great beers along with his home brew.

August 16th at 5:00pm

Death by Chocolate
Come experience three chocolate desserts while sipping on a chocolate M-tini. You will help the chef prepare a chocolate-orange mousse, and a chocolate-chocolate Grand Marnier soufflés with a chocolate Grand Marnier sauce. While these are setting and baking you will enjoy the chefs’ chocolate crème brulee.

Cigar and Wine Dinner*
Join Chief Chef Don for a fun filled evening as he pairs up his firehouse style cuisine dinner with the wines of HOOK & LADDER Winery and three choice cigars.

The evening begins with appetizers, cigar, and wine by the pond and progresses to a sumptuous four course dinner. Following the second course, we will go pool side to enjoy a cigar with a matched wine. The main course will then be server at the main table. The fourth course, dessert, with matched wine and cigar will finish the evening, pool side.
