Wine and Cigar Dinner*
Join Chief Chef Don for a fun filled evening as he pairs up his firehouse style cuisine dinner with the wines of HOOK & LADDER Winery and three choice cigars. The evening begins with appetizers, cigar, and wine by the pond and progresses to a sumptuous four course dinner. Following the second course, we will go poolside to enjoy a cigar with a matched wine. The main course will then be served at the main table. The fourth course, dessert, with matched wine and cigar will finish the evening, poolside.

Food and Beer
We will make a Firehouse steak sandwich with a roasted pepper mayonnaise, and learn to do double dip Firehouse onion rings with two great dipping sauces. Brother Tom will also match some beers to three great artesian cheeses as well as some of his favorite beers to go with the steak sandwich and onion rings. Of course his home brew will be out for tasting.

All About Tequila
Come enjoy chef Dons’ famous margaritas while we learn to incorporate tequila into our foods. We will start with a jalapeno tequila burger and then make a shrimp and pasta salad with a tequila chile dressing. We will finish with tequila banana rellenos. During all of this the chef will cover the qualities and kinds of tequila and of course sample some fine tequila.

Cooking with Smoke and Fire
Chef Don will cover the cooking method of smoking by smoking shrimp and scallops over cherry wood, we will barbecue a beef brisket and grill nectarines and make them into a savory wrap. Brother Tom will be serving up some great beers along with his home brew.

Join chef Don for a chocolate filled evening as he introduces chocolate into his firehouse style cuisine. We will begin the evening with a chocolate appetizer-tini and progress to a chocolate filled three course dinner. To accompany the meal the chef will match wines to each course. Come prepared to experience chocolate and more chocolate in sensational ways.

Valentines Day Dinner
On this special evening let chef Don prepare a special five course meal for you and that special someone. He will start with his Firehouse chicken skewers with a plum BBQ sauce. He will then serve course two and three, an avocado-cucumber soup with a crab-tangerine salad. The entrée will be a spicy grilled New York strip steak with a chocolate merlot sauce; this will be accompanied with creamy polenta and seasonal vegetables. The final course will be the Firehouse gourmets’ crème brulee. All courses will be matched to fine wines.

Creole Dinner
If you have never experienced or just miss the cuisine of New Orleans then come join Chef Don for a night of Creole dining. We will begin the evening with Creole crab cakes, and then enjoy a creamy Creole tomato soup. Our salad will be spinach and goat cheese with a warm andouille dressing. Our entrée will be a Cajun jambalaya of chicken and shrimp. All of this will be served with beers paired just for Creole cuisine. The fifth and final course will be bananas foster bread pudding with vanilla ice cream and caramel sauce.

The Basics of Wine and Cigars
If you would like to learn to appreciate wine, learn how to taste, select, and understand wines then this class is for you. We will taste four whites and four red wines. We will cover the process of tasting and exercise your pallet so you will begin to know what it is in wines you prefer. If interested we will also cover an appreciation of cigars and take you through the basics of selecting a good smoke just for you.

Lamb Dinner
If elegant is what you’re after, lamb chops are the way to go. They make any dinner an occasion. So don’t miss Chef Don’s lamb dinner where you will enjoy lamb marinated in a Pinot Noir and Thyme and then grilled, also sautéed baby vegetables and grilled fingerling potatoes. We will start with seared scallop atop cauliflower puree, move on to a fresh corn chowder and then the Chefs salad stack with a blood orange vinaigrette. Dessert will be the Chef’s lava cakes. All matched to fine wines.
